Falooda

Food is a necessity , but certain foods do not take time to be a temptation , an indulgence . Desserts are a great extension of a meal . They represent a human need to make space for luxury and not feel guilty about it ! To beat the Tropical heat – kulfi , gulkand , rabdi , Basundi and Falooda are great options . Falooda is my personal favourite . I follow the recipe of my mother , for making Falooda at home . Falooda is a beautiful layered drink . Layers of soaked Sabja seeds , soaked vermicelli , milk , rose syrup and Vanilla ice-cream , in a long glass ! A visual , sensory delight ! The red rose syrup , when blended with white milk and vanilla ice-cream , gradually turns a pleasant baby pink ! A culinary composition awaiting to be eaten … Eating each spoon is a divine bliss !Instead of vanilla ice-cream , malai kulfi also can be used . Falooda is an Indian dessert . It traces its origins to Iran . In Persian culture , this dish is called ‘ Faloodeh ‘ .
